Family Favorite Vanilla Ice Cream Recipe

Ingredients
2 teaspoons pure vanilla extract
2 cups half-and-half
½ cup sugar
6 egg yolks
1 cup half-and-half or heavy cream

Directions
Heat 2 cups of half-and-half until steaming, stirring occasionally. With a whisk or electric mixer beat ¼ cup sugar with the egg yolks until they are thick and lemon colored. Mix ½ cup of the half-and-half into the egg yolks and then slowly mix the egg yolk mixture into the saucepan with the rest of the half-and-half. Cook over low to medium heat until the mixture reaches 175 °F, is slightly thickened and coats the back of a spoon. Strain the custard if need be. Stir in the remaining cup of half-and-half or cream and the vanilla. Taste and add more sugar if needed. Chill to 40°F (about 30 minutes) and then freeze in an ice cream maker.
