The New York style of cheesecake is made with cream cheese and is an adaptation of Italian cheese cakes, which are made with ricotta cheese. New York style cheesecakes were an invention of Jewish delicatessens in early 1920s New York City, made possible by a particularly silky style of cream cheese, which was developed in a New York area dairy. When baked into a graham cracker or cookie crust, these smooth, rich desserts started a trend that moved Cheesecake into a class of its own.
