There's more than cheese in Gouda! The Dutch town is also home to a lesser well-known yet equally glorious treat - the Stroopwafel. Stroopwafels are syrup (stroop) waffles made with two paper-thin coaster sized disks sandwiched together with a layer of cinnamon-caramel syrup. They are delicious with a touch of whipped cream, a scoop of ice cream and perfect served with coffee or tea. For a real treat place a stroop wafel on top of a cup of coffee or tea and allow the cookie to warm a bit - just enough to soften the caramel filling. Stroopwafels will keep for a month in the cookie jar - longer if refrigerated or frozen.
